Raw Cacao, we’ve all heard about it…a superfood star that, shock horror, I’m only just getting around to trying out in my kitchen. I bought some in the form of a certified organic powder last week along with cranberries and coconut oil and made these delightful treats inspired by this recipe I found on my newly discovered love, Path To Wellness.
- 3/4 cup cranberries
- 1/2 cup dates
- warm water
- 1 cup walnuts
- 1/2 cup raw cacao powder
- pinch sea salt
- 2 tsp coconut oil
- soak dates and cranberries in warm water for approx 5 mins.
- blend walnuts, cacao and sea salt until finely ground.
- Strain soaked dates and cranberries, keeping the liquid. Add to the dry ingredients with coconut oil, blend to a crumbly texture that is sticky enough to form small balls. You may need to add a little of the date/cranberry liquid.
- spoon teaspoon sized pieces onto a tray and refrigerate approx 2 hours before eating!
Makes approx 40 irresistible treats.
Serve with coffee or your favourite green or herbal tea….or just pop one into your mouth when you open the fridge and see them there!
